Full Recipe

For the Poke Bowl:

• 1 cup sushi rice, cooked and seasoned with rice vinegar
• 1/2 pound fresh raw salmon, cubed
• 1 ripe avocado, sliced
• 1 ripe mango, diced
• 1/4 cup seaweed (such as nori or wakame), thinly sliced or crumbled
• 1/4 cup edamame beans, steamed
• 1 tablespoon sesame seeds (black or white), for garnish
• Fresh coriander or green onions, chopped (optional, for garnish)

For the Sauce:

• 2 tablespoons soy sauce or tamari
• 1 tablespoon sesame oil
• 1 tablespoon rice vinegar
• 1 teaspoon honey or maple syrup
• 1 teaspoon grated ginger
• 1 teaspoon sesame seeds

Instructions

Prepare the Rice

1. Cook sushi rice according to package instructions.

2. Once cooked, let it cool slightly and season with rice vinegar.

Prepare the Sauce

3. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey or maple syrup, grated ginger, and sesame seeds.

4. Set aside.

Assemble the Poke Bowl

5. In serving bowls, start with a base of seasoned sushi rice.

6. Arrange the cubed salmon, sliced avocado, diced mango, and steamed edamame on the rice.

7. Drizzle the prepared sauce over the ingredients.

8. Sprinkle sliced seaweed over the bowl for added flavour and nutrition.

9. Garnish with sesame seeds and, if desired, chopped cilantro or green onions.

10. Toss the ingredients together just before eating to coat them in the flavorful sauce.
